I’ve had no problems with Gigabyte mobos in the past. I wouldn’t hesitate to use them. Last mobo I got was Asus, supposedly better than my previous gigabyte, but have had more issues with it than gigabyte. Not sure what eVGA are like for mobo’s so can’t really comment on that, but I’m guessing they’re good by that price tag.
Video cards. I like eVGA, have a GTX280 eVGA. Graphics card order of preference for me (from IJK at least) would be, eVGA, XFX, Asus, Gigabyte (then all the cheap ones). I’m sure a gigabyte video card would be fine, but I’d be considering the other evga, XFX or Asus they have before it.
I’d agree on waiting if you could, but I’m not sure that’s an option. The orders already in with the eVGA out of stock – looking for alternatives, and pretty urgent from what I understand.
The only problem I had with a Gigabyte mother board, was one that I recently took out of my PC after a thunderstorm. The rest of the components were OK but the board was dead. I think any board would have died in the same situation. I’ve since bought one of the fancy surge protectors with a warranty and insurance ;-)

With that said the GTX 480 by Nvidia will be s0mething 0f a rare beast

matching the MB and Graphics Card is always a good plan.
less problems with GPU voltage drop as well.
